SALAD FOR THE WEEKEND

What you’ll need (for one person):
2 handfull Rocket salad
1/2 Cucumber
1 mozzarella cheese
Cherry tomatos
A little bit of olive oil (Using this as a topping)
Herbs of your choice (I used oregano)

Cut the cucumber and mozzarella and mix in with the cherry tomatoes and rocket salad in a bowl. Add a little bit of olive oil on top with some oregano (or herbs of your choice) and enjoy!

There is nothing that is better with eating clean, and lately I’ve been totally obsessed with salads – and I think this one is my new fav! It’s so good and it actually keeps you full for a very long time. This salad is perfect for either breakfast, lunch or dinner, or even as a side thing for the perfect barbecue night – and of course it is so easy to make and it takes you maximum 2 minutes – I think I wanna call this the new fast food. (yup, I totally just said that!)

LATE NIGHT RECIPE: RED VELVET CUPCAKES

Goooood evening you guys, are you ready for a new recipe on the blog? This time it’s recipe for a red velvet cupcake, and this is too good (I promise you).

You’ll need:
150 gram flour, 10 gram baking cacao, 10 gram baking soda, 1 teaspoon vanilla sugar, 2 teaspoons of red food coloring (here you can use as much as you like, just make sure you get the perfect red color that YOU want on your cupcakes),  2,5 dl of sour cream, 125 gram powdered sugar and regular sugar (take around 62,5 grams of sugar and 62,5 grams of powdered sugar), 60 grams butter and 2 eggs.

 

 

Mix it all together in a large bowl (you are free to use your kitchenAid here if you want to) besides the sour cream and the food coloring. These two things you wanna mix together in a smaller bowl to make sure you get the right red color that you want. After getting the perfect red color you can mix this in with the rest. Bake the cupcakes in the oven for 15-20 minutes on 175 degrees.

 

 

For the frosting, I used my fav regular frosting. For the frosting you’ll need is 100 gram butter, 200 grams powdered sugar and 200 gram of Philadelphia cheese (or other neutral cream cheese that you prefer). I really recommend using the kitchenAid for this one, just because the frosting gets more fluffy this way. You can also add in some vanilla extract or what ever you want if you don’t want the regular buttercream taste.

THE PERFECT DESSERT FOR EVERY SUMMER PARTY

I just love that the food stores got a lot of fresh berries and fruits in right now. I really can’t explain how much I’ve missed good tasting strawberries and blueberries, and they’re finally here! Today I wanna share such a great dessert that you easily can make for every summer party with you girlfriends of family. It’s so quick and (as mentioned) so easy.

Here is what you need:
– Whipped cream
– Philadelphia cheese
– Berries and fruits of your choice. I used blueberries, strawberries, raspberries and kiwis (such a nice combination if you ask me!)
– Chocolate chip cockies

This is how you do:
1. Crush the cockies into smaller pieces and evenly lay it on a plate.
2. Mix together philadelphia cheese and whipped cream and add a little bit of powdered sugar if you want to. (The powdered sugar will hide the taste of the cream cheese and make it a little bit sweeter).
3. Chop the berries and fruits in smaller pieces and sprinkle on a lot of all the fruits and berries that you chose.
… And voilá, there you have it!

THE BEST AVOCADO TOAST

I love avocados, and if there is one thing I could eat forever it must be the avocado toast. I’ve actually been that kinda girl who just puts a lot of avocados on the toast, but lately I’ve been loving to make a homemade guacamole that actually is pretty damn good on top of a toast too (besides using it as a dip for nachos or tacos).

For the guacamole you’ll need:

2 avocados, juice from half a lemon and a little bit of garlic (this step actually depends on how much you want. Add a little bit of salt and pepper, and of course mix it all together.

Cut some tomatos and sprinkle it on top!

THE BEST CARROT CAKE

… in the entire world

Hey guys. Since it’s almost christmas, I though I would share the recipe for my favorite carrot cake ever! It’s soooo good, I can’t even explain my love for this cake. And a funny part about this cake is last time I made this cake, I walked down to my neighbour with some of it for them to taste it as well, so now, every time I’m seeing him outside, he is like “Therese, please make me some cake”, so that would probably tell you guys how good this is! Haha

It’s actually from the Norwegian site called Det søte liv (the sweet life, if you translate it into english) that has many good recipes for both cakes and food.

For the cake you’ll need:
6 dl regular sugar
4,5 dl oliveoil
6 eggs
7,5 dl flour
3 teaspoons baking soda
3 teaspoon cinnamon
750 g rasped carrots

Whisk together sugar and olive oil in a large mixing bowl. Beat in the eggs (by hand or use electric Mixer) until the mixture becomes thick and light. Sift together flour, baking soda, baking powder and cinnamon. Mix into a smooth dough. Rasp the carrots fine and stir into the dough to finish.

Put the dough in a large baking sheet covered roasting pan (about 30×40 cm). Bake in the center of the oven at 175 ° C for about 40 min. Cool cake in shape. Turn the cake out of the mold and remove the baking paper.

For the icing you’ll need:
250 g butter
400 g cream cheese (f.eks. 2 packs of Philadelfia)
500 g powdered sugar
3 teaspoons of vanilla-flavoured suga

Stir together butter and a little powdered sugar to butter cream. Add the cream cheese, vanilla sugar and the rest of the icing sugar and whip cream cheese smooth. Bre cheese cream in a thick layer over the cake. If you want, you can even put some sprinkles on.
