What you’ll need (for one person):
2 handfull Rocket salad
1/2 Cucumber
1 mozzarella cheese
Cherry tomatos
A little bit of olive oil (Using this as a topping)
Herbs of your choice (I used oregano)

Cut the cucumber and mozzarella and mix in with the cherry tomatoes and rocket salad in a bowl. Add a little bit of olive oil on top with some oregano (or herbs of your choice) and enjoy!

There is nothing that is better with eating clean, and lately I’ve been totally obsessed with salads – and I think this one is my new fav! It’s so good and it actually keeps you full for a very long time. This salad is perfect for either breakfast, lunch or dinner, or even as a side thing for the perfect barbecue night – and of course it is so easy to make and it takes you maximum 2 minutes – I think I wanna call this the new fast food. (yup, I totally just said that!)

I love making smoothies, especially now it’s getting warmer outside. Today I started the day with a lovely and refreshing smoothie bowl, and I think this must be my new fav brekkie! So easy, and so quick.

What I personally loves about these smoothie bowls is that you can put what ever you want in them to personalize your own one. What I use in my smoothie bowl: 1/2 banana, a handful of goji, a handful of coconut chips, 1 glass of water, 1 glass of frozen raspberries. I mix it all in a blender, and decorate it to make it cute. I like using coconut chips, the rest of the banana that I didn’t use in my smoothie and some seeds or oats.

In my smoothies I love using goji berries, also known as a “super fruit”. I love using it just because it has a lot of good vitamins, and it also contains natural beta carotene.

I just love that the food stores got a lot of fresh berries and fruits in right now. I really can’t explain how much I’ve missed good tasting strawberries and blueberries, and they’re finally here! Today I wanna share such a great dessert that you easily can make for every summer party with you girlfriends of family. It’s so quick and (as mentioned) so easy.

Here is what you need:
– Whipped cream
– Philadelphia cheese
– Berries and fruits of your choice. I used blueberries, strawberries, raspberries and kiwis (such a nice combination if you ask me!)
– Chocolate chip cockies

This is how you do:
1. Crush the cockies into smaller pieces and evenly lay it on a plate.
2. Mix together philadelphia cheese and whipped cream and add a little bit of powdered sugar if you want to. (The powdered sugar will hide the taste of the cream cheese and make it a little bit sweeter).
3. Chop the berries and fruits in smaller pieces and sprinkle on a lot of all the fruits and berries that you chose.
… And voilá, there you have it!

You’ll need: Tortilla chips, beans, leeks, cheese, salsa, avocados (to make guacamole), regular quark and rockets (or salad of your choice).

Make the easiest nachos ever: All you have to do is put some tortillachips on a plate, cut some leek and sprinkle it on with some beans and some salsa sauce. Top it off with some cheese and heat it in the oven util the cheese is meltet. Serve it with som quacamole, some regular quark and rockets, and of course enjoy it (and eat a lot!).

I personally is not eating 100% vegetarian not a vegetarian, and I know that I never will fully become a vegetarian, but some times using beans instead of meat is a great idea, and this is my fav way to make nachos. Trying to not eat meat for one day during the week has been a trend for a very long time now, and I’m a big fan of it!
