What you’ll need (for one person):
2 handfull Rocket salad
1 mozzarella cheese
A little bit of olive oil (Using this as a topping)
Herbs of your choice (I used oregano)
Cut the cucumber and mozzarella and mix in with the cherry tomatoes and rocket salad in a bowl. Add a little bit of olive oil on top with some oregano (or herbs of your choice) and enjoy!
There is nothing that is better with eating clean, and lately I’ve been totally obsessed with salads – and I think this one is my new fav! It’s so good and it actually keeps you full for a very long time. This salad is perfect for either breakfast, lunch or dinner, or even as a side thing for the perfect barbecue night – and of course it is so easy to make and it takes you maximum 2 minutes – I think I wanna call this the new fast food. (yup, I totally just said that!)
For this recipe you only need (this will give you 3 small milkshakes): Around 10 scoops of vanilla bean ice cream, 7 Oreo cookies, milk, and for the topping and decor I used whipped cream (I used the one that comes in a can) & chocolate sauce.
This is how you do it: Start scooping vanilla bean ice cream into a blender. I made 3 Oreo milkshakes, so I used around 10 scoops, mix the ice cream with some milk (for the milk you really have to try out how much you want, like: do you prefer a thick milkshake or a thinner consistency?). Let it blend for a little while in the blender before you’re mixing the Oreos in to the milkshake. Blend it until it’s nice and even. Find some cute milkshake cups and make a little pattern with chocolate sauce. Top it off with some whipped cream and a Oreo cookie!
Happy Friday you guys. I gotta little recipe for you today, and it is totally FriYAY approved! This milkshake is just too good; I promise you, this milkshake will make you dream about milkshakes all night! It’s perfect for the summer weekends, if you’re about to have you’re girlfriends over for a cozy night in, and of course, it’s super easy to make.
I love making smoothies, especially now it’s getting warmer outside. Today I started the day with a lovely and refreshing smoothie bowl, and I think this must be my new fav brekkie! So easy, and so quick.
What I personally loves about these smoothie bowls is that you can put what ever you want in them to personalize your own one. What I use in my smoothie bowl: 1/2 banana, a handful of goji, a handful of coconut chips, 1 glass of water, 1 glass of frozen raspberries. I mix it all in a blender, and decorate it to make it cute. I like using coconut chips, the rest of the banana that I didn’t use in my smoothie and some seeds or oats.
In my smoothies I love using goji berries, also known as a “super fruit”. I love using it just because it has a lot of good vitamins, and it also contains natural beta carotene.

Goooood evening you guys, are you ready for a new recipe on the blog? This time it’s recipe for a red velvet cupcake, and this is too good (I promise you).
150 gram flour, 10 gram baking cacao, 10 gram baking soda, 1 teaspoon vanilla sugar, 2 teaspoons of red food coloring (here you can use as much as you like, just make sure you get the perfect red color that YOU want on your cupcakes), 2,5 dl of sour cream, 125 gram powdered sugar and regular sugar (take around 62,5 grams of sugar and 62,5 grams of powdered sugar), 60 grams butter and 2 eggs.
Mix it all together in a large bowl (you are free to use your kitchenAid here if you want to) besides the sour cream and the food coloring. These two things you wanna mix together in a smaller bowl to make sure you get the right red color that you want. After getting the perfect red color you can mix this in with the rest. Bake the cupcakes in the oven for 15-20 minutes on 175 degrees.
For the frosting, I used my fav regular frosting. For the frosting you’ll need is 100 gram butter, 200 grams powdered sugar and 200 gram of Philadelphia cheese (or other neutral cream cheese that you prefer). I really recommend using the kitchenAid for this one, just because the frosting gets more fluffy this way. You can also add in some vanilla extract or what ever you want if you don’t want the regular buttercream taste.
Caramel popcorn must be the ultimate weekend snack. A while back me and my mom tried to make it at home, and it was so much easier than I expected it to be (and so delicious as well!). Since it’s Friday (and weekend) I thought I would share the recipe with you guys! It’s actually perfect if you’re going to have your girlfriends (or boyfriend) over for a late night movie night – or even if you’re going to have a little barbecue outside this summer.
This is how you do it:
Melt the butter in a boiler. Stir in sugar and syrup and cook on medium heat for 3 minutes without stirring. Boil for 3 minutes, but now stir every 30 seconds. Pour the saucepan of the heat and add the soda and salt. Stir well. Finally stir in popcorn and mix well together. Have the caramel popcorn on a baking tray covered with baking paper. Cook at 150 degrees for 9 minutes. After half pastry time, take out the tray and stir in the popcorn. Put in the oven again and fry. Cool down, and enjoy!

I just love that the food stores got a lot of fresh berries and fruits in right now. I really can’t explain how much I’ve missed good tasting strawberries and blueberries, and they’re finally here! Today I wanna share such a great dessert that you easily can make for every summer party with you girlfriends of family. It’s so quick and (as mentioned) so easy.
Here is what you need:
– Whipped cream
– Philadelphia cheese
– Berries and fruits of your choice. I used blueberries, strawberries, raspberries and kiwis (such a nice combination if you ask me!)
– Chocolate chip cockies
This is how you do:
1. Crush the cockies into smaller pieces and evenly lay it on a plate.
2. Mix together philadelphia cheese and whipped cream and add a little bit of powdered sugar if you want to. (The powdered sugar will hide the taste of the cream cheese and make it a little bit sweeter).
3. Chop the berries and fruits in smaller pieces and sprinkle on a lot of all the fruits and berries that you chose.
… And voilá, there you have it!
I love avocados, and if there is one thing I could eat forever it must be the avocado toast. I’ve actually been that kinda girl who just puts a lot of avocados on the toast, but lately I’ve been loving to make a homemade guacamole that actually is pretty damn good on top of a toast too (besides using it as a dip for nachos or tacos).
For the guacamole you’ll need:
2 avocados, juice from half a lemon and a little bit of garlic (this step actually depends on how much you want. Add a little bit of salt and pepper, and of course mix it all together.
Cut some tomatos and sprinkle it on top!
